Obvius is Salcheto's all-natural lineup and the Bianco Toscana is a slick mix of organically and biodynamically farmed Trebbiano and Vermentino. This is bursting with ripe pear, dark honey, bramble and earthiness tied into this savoury element that underpins the funk. A soft pear and honey flavour hits your palate in tandem with Meyer lemon and beeswax alongside a medium-bodied expression to the finish. Spy a little of that yeasty character and that delicious savoury funk to tick all the boxes on the natural wine lovers' checklist of must-haves. This is so easy-drinking and kinda like a big umami bomb. Best with veggie stir fries, grilled chicken kabobs or Chinese takeout.

Freshness and simplicity rule here: 'Asinoi' sees the younger, lower slope fruit from the Ferras' three Barbera plots go into a single, value-driven bottle. Intense fragrances of cherry, raspberry, and cranberry compote reel off the glass, while on the palate brambly fruit is balanced by subtler notes of forest floor that help ground a very lively (ie, higher acid-driven) drinking experience. A spirited example of the playfulness that comes when a well-loved grape meets a production style that is at once innovative and steeped in tradition. Best enjoyed with a meal or friends – or even better, both! – Asinoi is a no-brainer for easy drinking, because not everything has to be complicated in life, or in wine.

100% organic and biodynamic Primitivo from the earliest harvest of grapes in Salento. Whole cluster, brief 8 day maceration, natural fermentation in stainless steel before aging in stainless and cement. Super bright, super fresh, 11-12% ABV Primitivo that is best served chilled. Nico calls it "Blue Wine" because of the distinct blue/violet color of the freshly run juice. Lively, light, playful, very fresh. The Bizona arises from Domenico Mangione’s desire to produce a Puglian red that eschews the traditional local style of Primitivo – fresh, drinkable, and more direct, with lower alcohol and the potential to be chilled in the cooler for 10 -15 minutes; essentially something that has vin de soif written all over it. Brimming with juicy blue/blackberry fruit, menthol and pine-y freshness – it’s taut, crushable, and ready to be put back with abandon!
