2019 Domaine de la Marinière Les Sous-Marins
Loire, France
Chinon AOP

Sourced from a selection of older plots of Cabernet Franc, this is a wonderful example of traditional Chinon meeting modern winemaking technique. Maceration of 1 month in concrete vats and then aged in old oak barrels for 15 months. This has volume and depth with intense dark fruit flavours brightened by pops of cherry and strawberry. It's wild and gamey, with earth, leather and spice mingling in the punch bowl of flavour. The tannins are fine-grained but omnipresent with a breath of freshness provided by much needed acidic lift. Like a wax-shaped moustache twirl, this shows sophistication and conveys a sense of great care and affection in achieving the result. Pair with game meats like venison sausages or medallions or with something more simple like tourtière or shepherd's pie.

2018 Beckham Estate Pinot Noire
Oregon, USA
Chehalem Mountains AVA

Not only is Beckham's Pinot Noir seen as a reference point for Oregon but they're also the foremost producer of clay amphorae in the US. Inspired by Elisabetta Foradori's choice of winemaking vessel and combining Andrew Beckham's background as a ceramics artist and ceramics professor, has brought an even greater renown to their amphorae production. The winery's production is sort of split into 2 different branches, guided by vessel choice. The AD line makes Andrew's legendary amphorae the heart of those bottlings, while the Estate line makes use of neutral oak. Salivating aromas of cranberry, strawberry, rhubarb, and peppery herbs and spices underpin this savoury Pinot. The stem inclusion brings a note of baking spices and tarragon. The mouthfeel is tense and lively, with an acidic lift to counter the fruity deliciousness. Aging potential: 8-10 years. A classic addition to any cellar. Pairs perfectly with grilled pork tenderloin, braised rabbit tagliatelle and seared filet mignon with sauteed wild mushrooms.

2021 Domaine des Sanzay Saumur-Champigny
Loire, France
Saumur-Champigny AOC

The Domaine was founded in 1880 and is now run by the 5th generation of Sanzays in the Loire valley, near the town of Saumur. Under the stewardship of Didier and Celine, and with the help of their son Ludovic, the estate has grown to 28 hectares and received official organic certification in 2019. Although it should be noted, since they live on the estate, they've had delicate and thoughtful agricultural practices since the early 90s. The domaine level Cabernet Franc is outstanding and classic with its waves of delicate red fruit, brilliant freshness and delightful structural precision. A mix of plums, cassis and blackberry are mingling with the sour raspberry and tart cranberry overtop of some very light wafts of violets and cracked pepper. The palate is plush but also ingrained with fresh acidity and the beautiful support of vivid tannins. This is lively and generous. Perfect with roast pork, chicken with a sauce of morels, spicy sausages, leg of lamb or a weeknight lasagna.
