2021 Trail Estate 'Supersonic' Sparkling
Prince Edward County, Ontario

Notes from our pals at Trail Estate:

"This wine has developed a cult following over the last few years. Like nothing else (we make or any wineries for that matter) — Supersonic is 100% Concord, which is a super-sustainable grape to grow and was once the backbone of grape-growing in Ontario. Hand harvested Concord grapes were pressed on a very long press cycle with lots of rotation to naturally extract juice from these hard-to-press grapes. The wine was fermented naturally to dryness and allowed to settle at a cold temperature to aid in stability. Bottled with an addition of (pre-fermented) juice to reach a desired pressure of 2.5 bar. A lighter vintage than our two previous, this wine is a light red in colour with high acid and light bubbles. The unmistakable aromatics run rampant through the wine. Unmistakably Canadian with a touch of finesse from the winemaking team :)"

Production of 240 cases. 9% ABV.

2020 Maenad Wine Co. Vidal PetNat
Niagara, Ontario

From female winemaker Yvonne Irvine. Born out of a desire to create a brand with integrity and produce honest, well made and interesting wines on their own terms. The brand celebrates women and wine - as they are, completely unfined, unfiltered, and untamed. Gorgeous Vidal grapes co-fermented with Niagara peaches and sumac to add subtle complexity and fun. This wine is bottled before primary fermentation is complete to capture the carbon dioxide and produce all those bubbles. Bursting with flavour- juicy apples, pears, and peaches. The sumac adds citrusy flavours and a bit of structure as well. Serve ice cold to avoid gushing.
Keep the bottle upright before hand to keep that glorious juice from fizzing over.
Unfiltered and bottled with lees. No Sulphites added.

2021 Trail Estate 'PIQ' Piquette
Prince Edward County, Ontario

Notes from our pals at Trail Estate:

"After pressing the Concord grapes for Supersonic, the grapes were put into a bin and recycled lees were put on top to ferment. Pressed after 4 days and allowed to ferment dry this wine had about 40 L of water added to it. Bottled with an addition of yeast and sugar in similar fashion to Champagne. An aimed pressure of 1.5bar. Like a trip down memory lane the Concord flavours of the this piquette jump at you, sending you down a path of remembering childhood autumn in Ontario. A slight spritz and a lightness to the palate this wine-like thing is the perfect easy sipper."

Just 50 cases produced of this delicious 5% ABV fun fizz.
