Starting from nothing, with just his courage and his convictions, Benjamin Taillandier intends to produce “old-fashioned” wines and does not conceive of any other culture than organic (certified AB since the 2011 vintage). His estate now extends over 20 hectares. 100% Carignan, old vines planted at an altitude of 400 meters on schist soils. The harvest is carried out by hand and in boxes. In the cellar, the grapes are destemmed, then vatting for three weeks and aging for twelve months in old barrels. Benjamin's Audere (Latin for "desire, dare") is a cuvée that lives up to its name. The old vines of Carignan give life to a remarkable wine. Aromatic, deep and fleshy, carried by black fruits and spices in a very lifted style. We are amazed by the sharpness, the tension and the freshness of this cuvée. A great wine! To be had with roasted meats, classic French braised meats and stews or shepherd's/cottage pie.
