From the birthplace of heroic viticulture.
Made of Chiavennasca (local Nebbiolo) with a part of other vines as Róssola, Rossolino Rosa, Brugnòla, Chiavennaschino, Pignòla and Negrera. Average age of the vines is 40 years. It is a blend of different historical vineyards situated between 600 and 750 meters a.s.l., south exposure. Very soft pressing, one night with skin contact, indigenous yeast. Aged in concrete. The elegance of Nebbiolo mixed with the genuineness of the other vines form a perfect union that expresses all the potential of the terroir.
The Noah's Ark depicted on the label represents the will of these brothers to recover the ancient local varieties. Very gentle pressing, and only about 24 hours of skin contact, ferments spontaneously, and rests in concrete briefly before being unleashed on the curious minds of Nebbiolo fanatics. Sleek strawberry, red currant, candied rose petal give evidence of Nebbiolo which rests atop a tarry earth, mineral core. Tangy acidity and light bergamot black tea tannins fuse with black cherry on the smoky earth finish. A genuine wine of this remarkable place and ancient varieties. Absolutely spectacular, a gorgeous play between ethereal and vibrant.
Super versatile food wine thanks to its balance of tannins and acidity that shows well with light pasta dishes, risottos, fish, lobster and crab, spicy foods or grilled vegetable skewers with halloumi.
