From young female winemaker Chiara Ciavoli. The grapes for this incredible Pecorino come from a single hectare planted in 2000. The grapes are hand picked in the first daylight and carried directly to the winery in small baskets.
An aromatic wine full of summer meadow flowers, melon, peach, apricot, lemon, green apple, rosewater, mint and thyme. It's delightfully complex in the mouth too, and light on its feet thanks to the lifted lemon notes and good acidity. Green apple and citrus flavours are joined by cantaloupe and honeydew melon, a richer streak of apricot, and a touch of smoky herbs on the finish. The sensation of salinity and mouthwatering acidity through the finish is absolutely sensational.
Give it a go with lemon garlic asparagus gnocchi, fettuccine with porcini and sausage or seafood risotto.
