Castor comes from 50-year old Malvasia vines grown on chalky limestone soils near orange groves. Macerated for two weeks on their skins and aged in clay amphorae, Castor showcases a rich colour, deep minerality and tremendous tension.
Notes of oranges, white plum, juicy apricot, delicate orange blossom florality and a finish that leans into bitter-ish nuttiness. Superb texture and volume on the palate with a cheeky touch of tannins and a balancing act of acidity.
