Paradise Grapevine, Paradiso, 2021

Notes from our friends at Paradise:

2021 Paradiso is made from organic (non-certified) grapes we sourced from two of our favourite vineyards in Niagara-On-The-Lake - the Jenkins Vineyard and the Willms Vineyard. Quinton Jenkins has always farmed his grapes without the use of synthetic chemicals, and after working with Erv and Esther Willms in 2020 we've managed to convince them to farm our grapes organically as well (humble brag)!

This isn't the first wine we've made using hybrid grapes - Vidal this time. Because of their natural resistance to pests and fungi they require way (way) fewer organic sprays and are less susceptible to extreme weather swings (and therefore climate change!).
 
The wine itself went through a cool 10-day maceration on the skins, beginning to ferment when we delicately pressed the fruit. We finished off fermentation in stainless steel at controlled temperatures before sending the finished wine to our neutral French barrels for aging. 

The wine itself is lean and soft with a restrained profile of lime popsicles, orange peel, lavender and mint. We like drinking it ice cold with wasabi peas but you do you!
