Penedes, Spain
A classically styled Cava composed of Macabeu, Parellada and Xarello that spends 12 months on the lees. There's soft orchard fruit notes of pear and fleshy apple alongside some earthier notes of chalk and a faint hint of honey. There's a flash of brightness in the acidity, which resolves fairly quickly and leads into the elegant mousse that foams the palate. There's just a suggestion of residual sugar on the finish. Best served chilled as an aperitif or with lightly fried seafoods, classics apps or go super simple with a bag of salty, crunchy chips.
