100% Sauvignon Blanc. Fermented using non-selected ambient yeast and aged for 18-months on its natural lees in neutral French oak puncheons. Bottled without fining or filtration.
What a wild ride this is! There's some Sauterne-ish qualities here with honeyed, waxy elements playing over some slightly flowery, citrusy qualities. Then it goes 180 with a salty, tangy finish blending in pleasing herbaceousness (classic Savvy B, as some might say) and a heavy dose of fresh fruits and zippy cool climate acidity. This can reward with lengthy aging and can cellar up to 20+ years.
